PREVENTASE W
PREVENTASE W is an enzyme preparation containing asparaginase derived from a selected strain of Aspergillus niger. It is standardized to have an activity of 2500 ASPU/g. PREVENTASE W finds application in the food industry where it helps reduce acrylamide formation. Asparaginase breaks down asparagine, an amino acid present in raw materials. This prevents the formation of acrylamide during high-temperature processing. By using PREVENTASE W, food manufacturers can reduce acrylamide levels and improve product quality and safety.
